Coy serves as the Operations & Data Director at the Council for International African Fashion Education (CIAFE), where she advances fashion education and innovation across Africa. Her vast experience includes guest lectures at prestigious institutions such as Virginia State University, London College of Fashion, Stadio School of Fashion, and Hult International Business School. She also plays a pivotal role on the advisory board for Fashion Merchandising and Management at Long Island University.

Her impressive portfolio includes collaborations with iconic brands like NIKE and Adidas, and influential organizations such as Black Girls Code. Coy’s insights have been featured in major media platforms including Blavity, Business of Fashion (BOF), Council of Fashion Designers of America (CFDA), and New York Fashion Week.

Coy is a published author, co-authoring 'Fashion Marketing in Emerging Economies' and contributing the pivotal chapter "Fashion Analytics in Africa and Middle East: Strategies, Tools, and Insights for Fashion Brands" in a Palgrave Macmillan publication.
